Pan-Seared Branzino w/ Lemon Pepper smashed Potatoes

Ingredients

Pan-Seared Branzino

Branzino: 4-5 fillets
Granulated Gallic: 1 tsp
Granulated onion: 1 tsp
Ground cumin: 1 tsp
Ground coriander : 1 tsp
Salt & black : to taste
Parsley flakes: 1 tsp
Dry rosemary: 1 tsp
Coconut oil : 4 tbsp
Butter : 4 tbsp

Zhoug sauce

Ingredients

4 medium cloves garlic, roughly chopped

2 packed cups fresh cilantro (about 2bunches, mostly leaves but skinny stems are ok)

4 medium jalapeños, seeds removed but reserved

1 teaspoon fine sea salt

1 teaspoon ground cardamom

¾ teaspoon ground cumin

½ teaspoon red pepper flakes, more to taste

¾ cup extra-virgin olive oil


Directions

-Place the garlic in your food processor and process until the garlic is broken into tiny pieces.

-Add the cilantro, jalapeño (keep the seeds in case you want to make the sauce more spicy after tasting), salt, cardamom, cumin and red pepper flakes. Process until the mixture is all mixed together and very finely chopped.

-While running the food processor, slowly drizzle in the olive oil. Scrape down the sides and blend until the sauce is mostly smooth.

-Adjust to taste—for a spicier sauce, add the jalapeño seeds or additional red pepper flakes (¼ teaspoon at a time) and blend again.

-Too bitter? You can add more salt or give the flavors some time to mellow. This sauce’s flavor transforms with time, so if it’s too spicy or you just don’t love it right off the bat, let it chill in the fridge and try it again in an hour.


Lemon pepper smashed potatoes

Ingredients:

Small golden potatoes: 1 lb

Crashed black pepper: 2 tbsp

Sea salt : 1 tbsp

whole lemons /zest & juiced: 2

Olive oil : 1/4 cup


Directions:

-Bring a large pot to boil and add in the potatoes. Salt to taste.allow potatoes to cook about 15 minutes or until mildy soften. (do not over cook)

-Remove potatoes from water while still hot. Using a spatula lightly smash potato .

In a bowl sprinkle a little bit of olive oil add salt and black pepper and lemon zest

-In a hot skillet add in the remaining olive oil, once olive oil has heated up add in smashed potatoes one by one allow to cook on each side up to 3 minutes until crisp and golden

-Pat dry branzino on a skillet

-Mix all your seasoning in one bowl, season the belly side of the branzino only

-In a hot skillet add coconut oil allow to heat up add in branzino skin side down to the skillet,allow to cook up to 5 minutes on medium high heat add in butter and baste . allow to cook once belly side becomes fully cooked, remove from skillet
